Beet pudding

Ingredients:

  • Beets: 2 medium, roasted and peeled
  • Coconut milk or almond milk: 1 cup
  • Honey or maple syrup: 2-3 tablespoons (adjust to taste)
  • Vanilla extract: 1 teaspoon
  • Chia seeds: 2 tablespoons (for thickening)
  • Cocoa powder: 2 tablespoons (optional, for a chocolate version)
  • Salt: a pinch
  • Fresh fruit or nuts: for topping (optional)

Instructions:

  1. Prepare the Beets:

    • Preheat your oven to 400°F (200°C).
    • Wrap each beet in aluminum foil and place them on a baking sheet.
    • Roast for 45-60 minutes, until tender when pierced with a fork.
    • Let the beets cool, then peel and chop them into chunks.
  2. Blend the Ingredients:
